Strawberry marmalade.

A Greek recipe from my grandmother. Slow-simmered with strawberries from a farm near Zürich.

The recipe

A jar of my grandmother.

Strawberries from a farm near Zürich. Sugar. Lemon, both juice and zest. Greek honey from my grandmother's island. Orange blossom and mastiha Chiou. A touch of Italian balsamic she would have approved of.

But this is my version, not hers. The Italian and the Greek that I am, layered into something she started.

Each jar approximately 250 grams. Enough for ten thick toasts, six small breakfast jars, or one weekend of feeling looked after.

How it will be made

From field to jar, by hand.

Once the batch reaches 10 reservations, the kitchen opens. Here is what happens between then and your pickup on Friday 8 May 2026.

    Pick the strawberries.

    Fresh, ripe, from a farm near Zürich. Picked the morning before cooking, never from a supermarket shelf.

    Hull and clean, by hand.

    Each strawberry is washed, hulled, and quartered by hand. The way she taught me. No machines, no shortcuts.

    Cook with care.

    Wide pan, low heat, watched the whole time. Stirred often. Skimmed when needed. Cooked just until it sets, and not a minute more.

    Jar while still warm.

    Sterilised glass jars, filled while the marmalade is still warm. Sealed properly, the way it was done before machines.

    Hand-label each jar.

    A small label, written by hand. Ingredients, batch number, your name. Because mass-produced labels feel wrong on something this slow.

    Ready for pickup.

    On Friday 8 May 2026, central Zürich. The exact address is shared with you the day before. Bring a small bag.

No preservatives, no thickeners, no added pectin.

Kitchen disclosure

Made in a home kitchen.

The same kitchen also handles wheat, eggs, dairy, and nuts. Cross-contamination is possible.

The exact pickup address is shared with reserved customers the day before. Quiet, central, walkable from a tram stop.
